COYA Brought Peruvian Flair Exclusively To ZUMA

During international Peruvian restaurant, COYA, hosted an exclusive pop-up in Zuma New York. The activation had taken over Zuma’s second floor bar, bringing COYA’s signature bar food, pisco sours and Ritual, the concept’s beloved weekly tribal music takeover by COYA Music, to New York City’s contemporary Japanese restaurant in Midtown Manhattan.

Inspired by Peru’s rich culture and flavorful eats, the pop-up offered a menu of COYA favorites including dishes such as atún chifa ceviche made with yellowtail tuna, soy, sesame seeds and spring onions; salmon tacos made with salmon, aji Amarillio, chives and cream cheese; and croquetas de lubina with Chilean sea bass, miso and spicy mayo.

Drink choices included COYA’s famed pisco sours,; chilcano with 1615 Pisco Quebranta, lime, ginger ale and angostura bitters; aji margarita featuring jalapeño infused tequila, lime, agave and avocado and green apple puree; and apricot mezcal negroni made with Del Maguey Vida mezcal, Cynar and apricot antica formula. For a non-alcoholic choice, guests found the chicha mejorada mocktail on the menu, made with purple corn, pineapple, cloves, vanilla and palo santo.

As part of the pop-up, COYA hosted its renowned multidimensional musical experience to New York City with COYA Ritual nights on Thursday, November 18th, as seen at COYA Mayfair, London and Dubai. The ritual nights brought melodic techno music, dancing and cocktails together with inspiration from Aztec culture to instantly transport guests from Manhattan to the vibrant tribal festivals of Peru. Creating a divine, magical space unlike anything other, guests heard music from COYA’s own music label, with beats from past Ritual DJs, including Laolu, Sparrow & Barbossa, FNX Omar and Diass. Nightly music at COYA at Zuma was overseen by Stephane Petit, COYA’s own global music director.
